Three Great Global Sandwiches

It seems that the whole world loves a great sandwich: a handheld meal of excellent bread with delicious fillings. We’ll begin our tasty tour with Banh Mi, a French Vietnamese fusion of crisp Wheatfields baguette with Homemade Sausage, Carrot Daikon Slaw and lots of herbs. Then to Mexico for a fabulous griddled Torta filled with Smoky Pork Loin, Black Beans, Local Cheese, and Avocado Salsa. Off to the Middle East for the very best Falafel – crisp Chickpea Fritters in flatbread with all the trimmings. And of course, a sweet ending!

If you’ve eaten Mexican food in a restaurant you might not imagine what healthy Mexican food could be. Hilary loves to mix up Mexican-inspired foods using traditional ingredients of corn, squash, beans and chiles to create a delicious and light fare that you’ll want to prepare at home. We’ll heat it up with Potato and Pea Enchiladas; A Good Pot of Tasty Beans; Spanish Rice; and Chilean Squash with Peppers. Then we’ll cool it down with a Sweet Fruit and Chocolate Treat.

We will be making our own Pierogi – the ever popular stuffed dumpling; Golumpki – cabbage leaves stuffed with ground meat; Mizeria – cucumber salad with a sour cream dill dressing; and, perhaps the most common dessert in Poland, Sernik – a subtly sweet cheesecake.
